Hi ya! Are you feeling eggcellent today? Haha, ya know… Post Easter? Please excuse my humor, I’m a wee bit tired. I tend to go overboard on the Corny factor when that happens.
Okay, but in all seriousness y’all, I am stoked for this week. I have a few different egg recipes to share to help you use up all those Easter eggs. Non boring, flavorful (and SPICY) egg recipes! Egg recipes made in 30 minutes or less. Starting with this Nasi Goreng.
Can you guess what’s in it? Have you ever had Nasi Goreng!? Oh then you must!
What is Nasi Goreng?
The original Nasi Goreng is an Indonesian stir fried rice dish. Typically, the dish is flavored with kecap manis (a sweet style soy sauce). Nasi Goreng is very similar to fried rice but uses a different technique combined with a spicier sauce. The eggs can be mixed into fried rice or fried in another pan, then stirred in. All it takes is a little onion or shallot, eggs, chili, garlic, veggies, and your secret sauce! I like to think of Nasi Goreng as spicy Indonesian street food served right up, hot and delicious! A perfect way to utilize ANY leftovers too.
What is carrot rice?
In this Nasi Goreng, we will be utilizing all the carrots, eggs, and leftover ham/sausage you got! Since I’m using chicken sausage, this will be a variation of Nasi goreng ayam and Nasi goreng santri. Dude, just google all the variations and you’ll know what i mean!
Riced carrots serve as our “rice,” then, throw in all the extra veggies you want. Which makes this dish naturally lower in carbs but higher in nutrient content!
Eggs are mixed right in along with our very own gluten free sweet tamari soy sauce (it’s a copycat recipe for kecap manis). It’s super simple! It also makes this dish paleo friendly, protein packed, and oh so easy! Ahhh.. see, it’s EGGCELLENT!
Let’s call this a “scrappy Cotter Creation meets Ethnic style street food!” That works. Just go with it. Capeesh?
What’s in Nasi Goreng?
- Tamari Sauce (aka gluten free soy sauce)
- Molasses
- Carrots
- Broccoli
- Bean Sprouts
- Eggs
- Any leftover chicken sausage, or ground breakfast sausage (precooked)
- Onions
- Red Chili Peppers
- Ginger and Garlic
- Sesame oil
- Cilantro

Nasi Goreng Breakfast (Paleo Friendly)

Description

Ingredients
For the sweet tamari soy sauce (You will use 3 tbsp in recipe. See notes for quick substitute)
- 3 tbsp tamari sauce (gluten free) or coconut aminos for paleo option
- 2–3 tbsp molasses
- 1 tbsp water
Spicy Mix-ins:
- 2 long red chilies, thinly sliced – remove seeds if you prefer less spicy (see notes for substitutes). Save 3- 4 tbsp of sliced chilies for garnishing.
- 3 garlic cloves
- 1 small shallot (sliced peeled) or 1/3 cup diced red onion.
- Pinch of ground ginger
For the Carrot Rice Nasi Goreng:
- 2 Tbsp oil for the pan (sesame or avocado oil)
- 5 eggs (2 mixed in batter and 3 to fry separately for platting.)
- 8 ounces pre-cooked sausage (chicken or any type of pre-cooked breakfast sausage – gluten free). Chopped or minced in food processor. Equivalent to one cup minced.
- 4 large carrots – “riced”
- 1/2 cup fined diced broccoli
- 1 tbsp sweet soy sauce (gluten free recipe above)
- 1 cup bean sprouts
- Kosher salt and pepper to taste
- Cilantro to garnish
- Optional topping – Asian chili sauce, sesame seeds.
Instructions
For the homemade Sweet Soy Sauce (copycat Kecap Manis)
- If you don’t want to make this then just use a gluten free hoisin sauce.
- Boil the tamari, molasses, and water in a saucepan over high heat. Then reduce heat to medium-low and cook until molasses has dissolved with the tamari. Place in separate bowl and set aside.
- You will have extra sweet soy sauce. See notes for storing.
For the Carrot Rice Nasi Goreng.
To Prep Beforehand:
- Spicy Mix-In; Mix the sliced chile pepper, ginger, sliced onion or shallot, and garlic together in a bowl; Set aside.
- Carrot/Vegetable “Rice”– Rice your carrots and finely dice the broccoli before starting to make the carrot rice nasi goreng. Simply pulse in blender or food processor then mix together and set aside.
- Add 1- 2 tbsp oil to a large frying pan or wok and place on medium high heat. Add the spicy mix-in vegetables and stir fry on medium high heat until fragrant. About 1 -2 minutes.
- Next, add the minced sausage and continue stir frying on medium high until flavors combine or are cooked through, about 3-5 minutes.
- Crack 2 eggs into the pan; fry together for 2 minutes. Mix in the carrot rice, broccoli, and bean sprouts. Cook over medium heat until combined.
- Lastly, Add 3 tbsp of the sweet soy sauce and a dash of salt and pepper. Gently mix with the vegetables until combined. Taste and adjust salt if needed. Cook for another 1-2 minutes until everything is coated.
- Divide carrot rice into 3 serving bowls.
- Using the same pan, fry 3 additional eggs over-easy . If skillet/pan is dry, add a tbsp more of oil. If the pan is still oily, you make skip adding more oil.
- Heat pan on medium-high heat then break eggs and SLIP into pan, 1 at a time. IMMEDIATELY reduce heat to low. cook until whites are completely set and yolks begin to thicken but are not hard.
- Top each bowl with fried egg and garnish with cilantro and any extra sliced pepper (if desired).
- Optional topping – Asian chili sauce and a sprinkle of sesame seeds.
Notes
- To reduce sodium, place tamari with reduced sodium Tamari sauce in your sweet soy sauce, and do not add additional salt.
- You will have extra sweet soy sauce. You can keep extra stored in fridge for 7-10 days. If you don’t want to make sweet soy sauce, feel free to use store bought Sweet Soy Sauce, but most are not gluten free.
- If you can’t find red chile peppers, you can use jalapeno or any other spicy pepper of choice. Spiciness will vary with each pepper. Deseed after slicing if you prefer less spice
